The wings of a plane can generate lift no matter what the bank angle, so long as the air on one side is high pressure and one is low pressure. The low pressure side creates the lift - and since low pressure air is colder, it can't hold moisture too well especially on a very wet day - creating the big cloud above the wing seen here as the pilot does a high-G maneuver.
